Tomato Chutney


Chutney is common dish among the Indians(South).It goes well with idili and Dosa...

Ingredients:

Onions(medium)-1/2 diced
Tomato(medium)-4 diced
Urad dhal-3tsp
Mustard Seeds-3tsp
Red Chili powder-3tbspn
Curry Leaves-2-3
SALT-to taste
Cilantro-for garnish
Oil

Method:

1)In a pan add oil and fry the onions until it becomes translucent.
2)Then add the tomato and nicely cook until onions and tomato becomes soft.Add red chili powder.
3)Let it cool.In a mixer,nicely blend the onions and tomato.
4)In another pan add little oil and sputter mustard seeds,curry leaves and urad dhal.Then add this to the blended mixture.
5)Garnish with cilantro...

Serve hot with Idili or Dosa...

Beef Paya


Ingredients:

Paya-Beef/lamb-4lbs
Shaan Beef paya mix-1 packet
Onions(medium)-1/2 diced
Tomato(medium)-1/2 diced
Ginger-garlic paste-3tspn
Red Chili powder-2tbspn
Turmeric powder-1tspn
Yogurt-2tbspn
Cinnamon,cardamon,clove-1 each
SALT-to taste
Oil
Cilantro/Coriander-to garnish

Method:

1)In a pressure cooker cook the paya with water for 6 whistle.Remove frm the pressure cooker.Don't drain the water.
2)In another pressure cooker add the oil,then add cinnamon,cardamon and clove.Then saute the onion until golden brown.Then add ginger garlic paste and saute until the raw smell goes.
3)To that add the red chili powder,turmeric powder,shaan paya masala,yogurt and little SALT.Nice mix and make it into masala.
4)Add the paya to the above mixture with the water.
5)Pressure cook it for 5 whistle or until the paya is done.
6)When done garnish with Cilantro.Sever hot with roti or rice...

Kuthu Parotta


Kuthu parotta is something which is common in road side in Tamil Nadu.Here is the recipe for the Kuthu Parotta..

Ingredients:

Egg-6
Onions-4
Tomato-4
Parotta-10
Curry leaves-little
Green Chili-2(cut into slits)
Pepper-according to taste
Red Chili powder-4tbsp
Cilantro-1 bunch
SALT-according to taste

Method:

1)Make the parotta(here i used hand made parotta),then shred it into small pieces and blend in mixer(just pulse).

2)In a bowl beat the eggs and red chili powder,green chilies,SALT,pepper powder and cilantro,and beat nicely..

3)In a pan add oil and saute the onions until translucent.Then add little ginger-garlic paste.Once the smell of the onions go,add tomato and mix well with the onions to a smooth mixture.

4)Then add the beat egg ingredients.Mix nicely and all the mixture must be smooth.

5)Now add the parotta and nicely mix with the above mixture.YUMMY kuthu parotta is ready.Can be served with Sauce....
